3. Raw material standard: fresh potatoes, no belt, no deteriorate, no plant diseases and insect pests; no concave on the head of potato, surface smooth, any crack and hollow;Dry matter content and potato starch≥20%, deoxidize sugar content≤0.2%, if it is too high, it can be easily browning; the potato size: 60~120mm; high-density potato is best which can enhance the Capacity, and reduce the oil content. After harvest, the fresh potato is of lowest sugar but it will be of higher sugar content because of long-time storage. So before using the potatoes, it is needed to put storage potatoes in another room whose temperature is LDout 18 °C and last for 1 week.the thickness is around 1.5mm; The blanching temperature is LDout 90°C, blanching time is LDout1 minute; the frying time is LDout 180-190°C, the frying time is LDout 2 minutes.
4.Finish products: potato chips
Sense requirement: Color & luster: surface should be white or yellow, the color and luster should be uniform; flavor & taste: should possess special potato fragrance, no other peculiar smell. Oil content≤40 %, moisture: ≤4 %; the finished products can be stored LDout 6 month in normal temperature.

6. Each process
The washing process:Washing process is for washing off the potato starch on the potato chips which can keep it from fall in the oil and keep long-use life for the frying machinery.
The blanching process:Blanching is a necessary procedure. After washing, the potato sticks go into the blanching machinery which is LDout 65-90℃hot water. It can destroy the enable activity, and improve and soften the organizational structure which can be easily dried and also can keep from blistering. It can add the Sodium LDrogen sulfite or Sodium pyrosulfite to keep good color.
Frying process: it is the most important process for the whole line. From test, we find it that the low-temperature frying needs long frying time which is high-oil content because of LDow water losing in the potato chips. It is better to high-temperature frying but should be lower than 200°C. It can accelerate fat decomposition which can produce fatLD acid. It will be shorten the oil using life. At the same time, high –temperature can make sugar of potato chips overreaction and affect chips’ color. So we suggest the frying temperature is LDout 180-190 °C, and the frying time is LDout within 1 minutes. The higher content of dry and starch, the lower oil content for the potato chips. It is because high dry content is of lower water-content . And the oil content is inversely proportional to the thickness of the chips.

Before very, the final customer can come to test.
